When you wake up, your body has had no food for over eight hours;  fuel is needed to kick-start  the metabolism. The best breakfasts contain nutrients and vitamins, and enough calories to sustain you until lunchtime. It can be tempting to just reach for the cereal and milk or toast every morning, but these don’t always provide good nutritive value. If you are lacking breakfast inspiration, try some of the following recipes. Most of these are quick and simple to put together, so won’t slow you down in the morning.

Cinnamon Quinoa. Quinoa is an edible seed that is prepared and eaten in the same way as a cereal grain. It is extremely nutritious, containing high amounts of minerals, as well as being  rich in fibre and a good source of protein (Quinoa contains all essential amino acids). Alone it is fairly bland, but adding other flavours such as cinnamon and walnuts produces a delicious breakfast porridge. Topping with your favourite fresh, seasonal fruit adds a further nutritional boost to this highly nourishing and sustaining breakfast.

Baked Blueberry Donuts. Donuts needn’t be unhealthy. Not completely, anyway – these baked breakfast donuts add fruit and remove the frying step. This results in a lower fat donut and also adds extra fibre and antioxidants. .

Jumbo Chickpea Pancake. Pancakes are a popular breakfast choice, and these chickpea variations provide high protein and fibre. You’ll need to find chickpea flour (try the local health store), which gives them a distinct flavour that is perfect for savoury toppings such as avocado and tomato.

 Vegan Jelly-Filled Muffins.  A light and fluffy breakfast muffin that can be filled with your favourite jam, mashed banana or chocolate. They have a subtle, sweet flavour, and are perfect with a cup of coffee in the morning.

Many breakfasts don’t provide your body with good quality fuel for the day. If you are in a rut with breakfast, or just feel like experimenting, vegetarian breakfasts can be hearty, delicious and healthy. Try some of the above recipes, or search online for quick, healthy breakfasts and reap the benefits of a delicious, sustaining start to the day.
