If the pastry chefs offer, as usual, irresistible Easter cake recipes to be purchased on site or delivered, there is nothing stopping you from making your own Easter dessert. For the occasion, the Easter nest is in the spotlight, made from homemade cake, which is generously garnished with miniature eggs.
To make it, many opt for the classic layer cake, straight from our Anglo-Saxon neighbors. The latter, very fashionable for several years on social networks, brings together several layers (layers) themselves separated by layers of cream or jam, all of which can be covered with cream or not. Others are content to prepare a simple cake, baked in a savarin mold. The latter, hollow in its center, will make it possible to obtain an even more realistic nest, and to hold a larger number of eggs there.

The nest
To make an edible nest worthy of the name, you use chocolate shavings, flaked almonds or grated coconut, which you place in a circle on top of the cake, once the latter is cooked, cooled, and ready. to be decorated. For the most patient, angel hair, made from caramel swept into a very fine net, offers a full-bodied look but requires a minimum of technique. Many also use vermicelli noodles, which look like twigs when coated in melted chocolate. Place everything in the refrigerator for about 1 hour so that the bird can settle in its nest, and above all so that it hardens properly. Finally, the simplest technique is to draw a nest using chocolate sauce for example, by forming several circles on the top of the cake.
