In Haiti, Barbancourt Rum has cultivated a unique signature for over a century: that of rums made from pure cane juice, distilled using a method inspired by the world of Cognac then patiently aged in oak barrels. In the fertile plain of Cul-de-Sac, the House composes rums that are fresh, round and deeply aromatic, whose style is based on finesse as much as gourmandise.

All Barbancourt rums are made from pure cane juice, not molasses. This raw material constitutes one of the essential markers of the House and contributes to its particularly fresh and vegetal expression.

Barbancourt works in particular with Madame Mevs cane, an emblematic variety of Haiti, appreciated for its richness in sugar and its aromatic potential. It brings notes of vegetal freshness, ripe fruit, sweet spices and a pastry dimension to the rum. Part of the cane is grown on the historic estate while the House also works with a network of 3,000 partner planters.

After manual harvesting, the canes are crushed quickly, within 24 to 48 hours, to preserve the freshness of the juice. This then ferments for around two days, with precise work on the yeasts to maintain the aromatic regularity of the future rum.

This is one of the great particularities of Barbancourt rum. The House has historically relied on a double distillation method inspired by the art of Cognac, an approach that has long been rare in the world of rum.

The distillation apparatus is based on two columns connected together. The distillate thus undergoes two distinct distillations in a continuous process, allowing its purity, texture and aromatic expression to be worked with precision. The objective is to give birth to fine and clean rums, without heaviness, while retaining the freshness and identity of pure Haitian cane juice.

This search for finesse continues in the cellars. Unlike a large part of the traditional Haitian rums, which are rather white, Barbancourt is built around the production of old rums, aged in the hot and humid climate of the Cul-de-Sac plain. The rums age mainly in oak barrels, in a tradition inherited from Cognac.

The heart of the range brings together four rums which allow you to discover the different facets of the Barbancourt style, from the liveliness of pure cane juice to long-aged expressions.

  • Rum Barbancourt Haitian Proof — 55% vol.

Made exclusively from pure fresh cane juice, Haitian Proof favors the freshness and liveliness of the Haitian terroir. With its 55% vol., it offers a more intense expression of the raw material and also constitutes an expressive basis for mixology.

  • Barbancourt 3 Star Rum — 43% vol.

Aged for four years in oak barrels, the 3 Stars represent the historic expression of the House. Its name perpetuates an old classification system inherited from Cognac: the three stars historically corresponded to eaux-de-vie aged two to three years. Barbancourt chose to keep this nomenclature as a marker of its Charente heritage.

  • Barbancourt 5 Star Rum — 43% vol.

Aged for eight years in oak barrels, the 5 Star is one of the signatures of the House. Fuller and deeper, it seeks the balance between aromatic richness and finesse. It illustrates particularly well the working of wood and time in the Barbancourt style.

  • Rum Barbancourt Réserve du Domaine — 43% vol.

The flagship of the permanent collection, the Réserve du Domaine is made from the House’s finest eaux-de-vie, then aged for 15 years. A more mature and refined expression, designed to highlight the depth acquired over the years.

Over time, the Barbancourt style gains roundness without losing its freshness. The aromatic profiles of the House reveal notes of cocoa, sweet spices, ginger, ripe fruit and pastry, to which is added a generous and elegant texture.

This indulgence also explains the versatility of these rums. The youngest expressions can be enjoyed alone or included in classic cocktails, while older rums lend themselves more to pure tasting, allowing their evolution in barrel to be fully appreciated.

The 3 Stars lend themselves particularly well to mixology. The House’s file notably proposes a Rum Sourcomposed of 6 cl of Barbancourt 3 Star Rum, 2.2 cl of lime juice and 2.2 cl of simple syrup. Everything is shaken then filtered and served on ice, with a wedge of lime.

He also enters a Daiquiriwhile its aromatic profile allows you to imagine cocktails where the freshness of cane meets citrus fruits, spices or fruity notes.

For older expressions, tasting pure, at room temperature or slightly chilled, allows you to better perceive the work of aging and the complexity of the eaux-de-vie.

If Barbancourt claims a profoundly Haitian identity, the House is also evolving its practices. The valorization of bagasse, a fibrous residue from cane, has made it possible since 2016 to produce electricity by cogeneration. A photovoltaic project is also being studied in order to continue reducing the site’s carbon footprint.

In the glass, this desire for high standards translates into a coherent range, where the freshness of the cane, the precision of the distillation and the work of the oak create an immediately recognizable identity.
