Green salad

A serving of this salad makes a perfect snack during the fasting phase. Recipe taken from Great book of women’s nutrition.

This recipe contains enough fiber to feed your gut bacteria, plus MCT oil to inhibit the hunger hormone in your brain

Ingredients

Sauce

  • ¼ cup MCT oil
  • 1 ½ tsp. to s. lemon juice
  • 1 pinch of kosher salt
  • 1 pinch of freshly ground black pepper

Salad

  • 1 cup of arugula
  • ½ cup whole fresh parsley leaves
  • ½ cup whole fresh basil leaves
  • ¼ cup whole fresh mint leaves
  • ¼ cup olives in olive oil

Preparation

In a bowl, whisk together the oil, lemon juice, salt and pepper until smooth.
Place the arugula, parsley, basil, mint and olives in a salad bowl, then mix well. Drizzle with sauce and serve.
