This recipe contains enough fiber to feed your gut bacteria, plus MCT oil to inhibit the hunger hormone in your brain
Ingredients
Sauce
- ¼ cup MCT oil
- 1 ½ tsp. to s. lemon juice
- 1 pinch of kosher salt
- 1 pinch of freshly ground black pepper
Salad
- 1 cup of arugula
- ½ cup whole fresh parsley leaves
- ½ cup whole fresh basil leaves
- ¼ cup whole fresh mint leaves
- ¼ cup olives in olive oil
Preparation
In a bowl, whisk together the oil, lemon juice, salt and pepper until smooth.
Place the arugula, parsley, basil, mint and olives in a salad bowl, then mix well. Drizzle with sauce and serve.
