Chocolate brioches

Ingredients

  • 60 g butter organic sweet milk from our Grand Fermage regions, melted
  • 500 g flour T45
  • 50 g sugar powder
  • 1 bag sugar vanilla
  • ½ c. coffee salt END
  • 1 bag yeast dehydrated baker’s
  • 1 entire beaten + 1 egg yolk
  • 125 ml of milk + 2 tbsp. tbsp
  • 125 ml water
  • 100 g chocolate chips black

Instructions

  • In the bowl of a food processor fitted with the hook, place the flour, sugar, vanilla sugar and salt. Add the baker’s yeast and start kneading at slow speed.
  • Add the melted Grand Fermage organic soft butter, the beaten egg and the chocolate chips.
  • Gradually pour in the milk and water. Knead for 7 minutes at medium speed until you obtain an elastic, soft and non-sticky dough.
  • Form a ball, cover the bowl with a damp cloth and leave to rise for 2 hours in a warm place.
  • Punch down the dough and divide it into 8 even balls. Place them on a baking sheet covered with baking paper and leave to rise for another 30 minutes.
  • Brush the surface with the egg yolk and milk mixture. Cook at 200°C for 25 minutes.
