Chocolate brioches
Ingredients
- 60 g butter organic sweet milk from our Grand Fermage regions, melted
- 500 g flour T45
- 50 g sugar powder
- 1 bag sugar vanilla
- ½ c. coffee salt END
- 1 bag yeast dehydrated baker’s
- 1 entire beaten + 1 egg yolk
- 125 ml of milk + 2 tbsp. tbsp
- 125 ml water
- 100 g chocolate chips black
Instructions

In the bowl of a food processor fitted with the hook, place the flour, sugar, vanilla sugar and salt. Add the baker’s yeast and start kneading at slow speed.

Add the melted Grand Fermage organic soft butter, the beaten egg and the chocolate chips.

Gradually pour in the milk and water. Knead for 7 minutes at medium speed until you obtain an elastic, soft and non-sticky dough.

Form a ball, cover the bowl with a damp cloth and leave to rise for 2 hours in a warm place.

Punch down the dough and divide it into 8 even balls. Place them on a baking sheet covered with baking paper and leave to rise for another 30 minutes.

Brush the surface with the egg yolk and milk mixture. Cook at 200°C for 25 minutes.

The sweet organic milk butter from our regions gives the brioche its stringy and airy crumb, and this beautiful golden brown when cooking. A result that really has nothing to envy of the bakery.
