Pastel de Nata, a simple wonder to prepare
With its puff pastry topped with a creamy golden egg cream, pastel de Nata can be enjoyed warm or cold, sprinkled with cinnamon or not. This preparation is very simple and recalls the taste of transmission so dear to Portuguese families. To prepare pastéis de Nata, requisition your cupboard basics, puff pastry, and special molds.

What ingredients for Pastéis de Nata?
You will need 250 g of homemade or ready-made puff pastry (your choice), 1/2 liter of milk, 6 egg yolks, 40 g of flour, 180 g of sugar, 1 piece of butter, 1 stick of cinnamon and 12 pastéis molds from Nata.
Preparing the Pastéis de Nata dough
Cover your work surface with flour and roll out the dough into a large rectangle. Brush it with butter, then roll the dough on itself until you have a sausage. Cut 12 sections approximately 1.5 cm high and flatten them between your fingers. Finally, after having buttered the molds, position the circles of dough obtained.
Preparing the filling for Pastéis de Nata
Before filling the dough, pour the milk into a saucepan, add the sugar and incorporate the flour while the mixture is still cold. Heat everything and stir until you obtain a thick and creamy texture. After letting the mixture cool, whisk in the egg yolks.
Assembling and cooking Pastéis de Nata
Once the filling is ready, pour the mixture into the puff pastry circles placed in the mold. Bake at 200°C and cook for 15 to 20 minutes. Once the cooking time has been reached, remove the Pastéis from the oven, unmold them and let them cool for around ten minutes. Serve warm with a sprinkling of cinnamon.
