In the editorial office of ELLE à table, when we need advice on a recipe or a trick, it’s always Marjolaine – Marjo for short – who we call.
For her, cooking is a moment of joy and sharing, never a source of stress. As a result, she is always available to explain a slightly technical gesture or discuss a little-known ingredient. From now on, she will guide you to easily achieve the sweet or savory creations that are creating a buzz among chefs or on the networks.
Let’s see if the roses…
“For this great first, I wanted to focus on apple roses: this mixture between pastry (puff, filo, shortcrust, brick) and apple strips that we see flowering on the Web between cooking blogs, Instagram and Pinterest. On paper, these chewable flowers seem complex to make, but they’re really simple! The idea is to dispose. pre-cooked apple strips on strips of dough, leaving the arc of a circle beyond. Then, fold the lower part of the dough over the apples. Thus, the fruits are enclosed in the dough. We roll the tape around itself and – magic! – the flower is formed. I’ll explain everything to you, step by step, to make your apple bouquet a success every time. »
My little extra tips
- Do not cut apple slices that are too thick, otherwise it may be more complicated to roll the dough.
- Stay reasonable with the quantity of jam or compote brushed on the dough, this will prevent the jam or compote from overflowing when assembling.
- If, when serving, you want to add a heart of salted butter caramel to the center of the apple roses, I won’t throw away the first petal…

How to color apple slices

© Marjolaine Daguerre
To color the rose petals, you can cook the apple slices in the microwave with crushed red or black fruits (raspberries, blueberries, blackberries, blackcurrants). The intensity of the color will depend on the fruit used and the quantity added.
