Roasted cod with herbs and grilled green beans with butter and garlic

  • 2 cod fillets
  • 500 g fresh green beans
  • 3 cloves of garlic
  • 1 bunch of fresh herbs (chives, chervil, thyme, etc.)
  • 60g butter
  • 1 tablespoon(s) soy sauce
  • 1 bay leaf
  • the juice of 1 lemon

  1. Hull the green beans. Peel the garlic cloves and cut them into strips. Chop the herbs.

  2. Cook the green beans for 15 minutes in a large pot of boiling salted water. Then rinse them under cold water.

  3. In a pan, melt half the butter with the garlic. Add the beans and sauté them for 5 minutes. Deglaze with soy sauce.

  4. In a second pan, melt the remaining butter with the bay leaf. Brown the cod fillets for 2 minutes on each side. Salt, pepper. Add the herbs and lemon juice; extend the cooking for 3 minutes depending on the thickness of the backs, basting them regularly with the juices from the pan.

  5. Serve the pan-fried backs with the garlicky green beans.
