Ingredients
- 15 cl of dark beer
- 1 pinch of cayenne pepper
- 1 tablespoon(s) English mustard
- 175 g cheddar or other hard, tangy cheese, grated
- 1 dash of Worcestershire sauce + for serving
- 1 egg yolk
- 4 thick slices of white sandwich bread
Preparation

Preheat the oven grill to high heat and line a baking sheet with baking paper.

Pour the beer into a medium saucepan.

Bring to the boil and maintain for 1 minute so that the liquid reduces slightly. Add the cayenne pepper and mustard, then whisk everything together.

Remove from the heat and while whisking, gradually add the grated cheese. Pour in 1 dash of Worcestershire sauce and mix well. Add the egg yolk, then let cool.

Toast the bread slices, then cover them with a generous layer of cheese dough.

Arrange them on the baking sheet and place under the grill for 3 or 4 minutes until the cheese is nicely browned and bubbling.

Serve with Worcestershire sauce.
