11 winter shepherd’s pie to withstand the cold

What if we put a winter zest in our shepherd’s mince?

Shepherd’s pie is one of the inexpensive family dishes, essential to the French gastronomic heritage. A bad canteen memory for some, a comforting dish for others, mince is the subject of debate. This is because minced meat that is too dry or a puree that is too thick can spoil the balance of the dish.

A soft and tasty stuffing

Whether you choose a stuffing based on meat or fish, you must respect a fundamental element: taste! It seems silly, written like that, but you have to give a lot of flavor to your stuffing so that it gives the general identity to the dish. Ground beef combined with meat juice; shredded chicken flavored with spices; soft pulled pork cooked in broth, the stuffing must be soft enough not to dry out too much during cooking. Using duck confit is also an excellent option thanks to the fat in which the meat is cooked.
Obviously, you can use a mixture of meats, for example ground beef + sausage stuffing. Between the first which is dry and the second which is fatty, the whole will be perfectly soft after cooking.

The art of sweet and sour

To brighten up the stuffing, dried fruits such as prunes, apricots, grapes, and figs are an excellent option. And to guarantee their softness, do not hesitate to rehydrate them for a few minutes in boiling water before chopping them and including them in the stuffing.
To add more texture to this dish, you can also include chopped oilseeds or seeds. And if they are dry roasted simply in a pan, even better!

The spices also allow this dish to travel, like the pepper; curry; smoked paprika; Cajun spices; ginger ; saffron; or turmeric.

On the importance of the puree

Another key element of this recipe: the mash. If the classic potato remains inseparable from shepherd’s pie thanks to its mild flavor which can go well with any stuffing, other flavors are possible. Potatoes – carrots; butternut squash puree; pumpkin; parsnips; celery root; or vitelotte, are perfect winter options. Don’t forget that this dish goes in the oven before serving, so you have to anticipate the texture of the puree and the stuffing, which must be well “hydrated” so that the whole thing does not dry out excessively and remains pleasant to eat.
