Like every year, on February 2, we celebrate Candlemas, the perfect opportunity to treat yourself to delicious homemade pancakes. And what’s more delicious than a crepe? A chocolate crepe of course!
Crepes are a classic recipe that everyone loves. They can be garnished with all kinds of sweet or savory foods, and even flavored with spices or rum. Among the most popular variations, the chocolate crepe is one of the hits.
How to prepare chocolate crepes?
The recipe for chocolate pancakes does not differ much from classic pancakes. You can add cocoa to the flour when making the dough or settle for a gourmet chocolate-based filling, or even opt for both options!
Cocoa-flavored pancake batter
We start by mixing the flour, sugar and salt with the cocoa powder. Then add the eggs, then the cold milk gradually. How do you know if your pancake batter is the right consistency? It should be fluid, but not too liquid either. Add the milk, adjusting the dosage according to the texture.
For lactose-free pancakes, simply use vegetable milk or creams.
It is entirely possible to flavor them by adding, for example, rum or vanilla to the dough, even if this is not really necessary, the latter being already flavored with cocoa.
The method
Once the cocoa batter is ready, all that remains is to fry your crepes in a lightly buttered pan or crepe maker. Nothing’s easier !
And for a caramelized effect, sprinkle each pancake with a little brown sugar before turning one last time.
What filling for my cocoa pancakes?
Cocoa pancakes can be served cold or hot, with all kinds of toppings. Depending on the season, they go perfectly with fruits like bananas for example, or red fruits in summer. The biggest gourmands garnish them with honey, whipped cream, almonds, or simply sugar.
The right filling for chocolate pancakes
To make plain chocolate crepes, simply spread them with a chocolate sauce. For example, you can use spread, home-made chocolate sauce (hot cream + chocolate), or even homemade chocolate praline. Chocolate pancakes go perfectly with whipped cream, banana and other fruits depending on the season. To make the classic dark chocolate and citrus supreme combo, mix sugar with orange supremes for example in a pan over low heat, until the latter have released their juice, and serve with a chocolate coulis. And for a dessert that is sure to impress, cover the crepes with milk or dark chocolate ganache, before layering them on top of each other to obtain a delicious chocolate crepe cake.
