Spring is definitely here. With it comes the desire for freshness, raw vegetables, salad, and carpaccio.
Spring products
If we are already enjoying the return of small vegetables in early versions, in spring we give pride of place to green and white asparagus; artichokes; baby spinach; spring onions; peas ; beans; and fresh herbs of course. Delights that can easily be slipped into spring pies, but it's not the only option, far from it.
Recipes without an oven
When, for various reasons, we don't want to turn on our oven – or we are simply poorly equipped in a small kitchen – we fall back on recipes prepared differently, such as spring salads.
Steamed, in a casserole dish, stewpot, sauté pan, frying pan, fryer, or in a sandwich maker or panini maker, there are many different cooking methods. You can even simply cook a tartare or fish carpaccio without heat with lemon juice.
Luncheon on the Grass
The return of spring heralds mildness obviously, but also meals taken outside, in the grass, in parks, at the water's edge, when the temperatures are mild. The opportunity to put between two slices of bread – national glory – all these seasonal vegetables. Baguette ; seed bread; Viennese; challah; or even in yesterday's croissants, spring sandwiches are constantly reinventing themselves. If ham and butter remains undeniable in our hearts, other, less classic options are perfect for the season. The important thing is to dare! Always.
