With global inflation impacting electricity, the price of materials but also foodstuffs, our wallet is looking gloomy… Concerning inflation unfortunately, we cannot do much, so we have to look at the actions that we can set up in our basket.
Seasonal products in majesty
We can never say it enough but seasonal products are cheaper! For what ? Because they are available in quantity, come from less far away, and have not grown in a heated greenhouse. A better choice for the planet, our wallet, but also our body. Indeed, winter vegetables, for example, meet our needs for defense, immunity, and vitality, when energy is at half mast. Citrus fruits rich in vitamin C; fruits and vegetables rich in dietary fiber which regulate transit; but also fish rich in vitamin D to compensate for the lack of sun, when making your choice in store, we always think “season”. As a reminder, fish also have their season! And we don’t hesitate to go all out at Mr Goodfish to discover new species, easy to cook, accessible, and which are not subject to fishing pressure to move away from cod, salmon, or tuna, among the species the most consumed in Europe.
Recycling, better than waste
Often, we waste without even realizing it. Far from being unwilling – we are all in the same situation – in the kitchen, we can always reuse one or the other part of the food, destined to end up at Madame Poubelle’s.
Have you cooked a roast chicken? Perfect, transform the carcass into chef’s stock by sprinkling it with water, and adding a little chopped onion and two or three slices of lemon, simply roasted in a pan. A little coarse salt, peppercorns, and a bay leaf in the story, and off we go for slow cooking over low heat. We apply the same method with fish bones and carcasses which are transformed into a wonderful aroma. Obviously, you can slip in a few pieces of carrots, leeks or other vegetables for more flavor.
On the peeling side, we keep the same philosophy and recycle fruit and vegetable skins such as potato skins into chips for example. The apple cores become a delicious jelly, which will delight with crepes or pancakes. Also, if your vegetables are intended to be transformed into velouté, do not peel them (except in certain cases such as some squash with too thick skin), cook, and mix everything. Be careful, however, to choose products of organic origin, and brush them well with use.
We talk a lot about seasonal fruits and vegetables, but eggs, canned sardines or tuna, chicken, or even legumes are also good for our wallet.
