Cheese reigns supreme in fall cuisine.
With the arrival of autumn, temperatures drop and the desire to warm up with comforting dishes arises. And nothing says comfort like melted, creamy cheese. Incorporated into a savory autumn pie, added to an invigorating soup or melted on a vegetable gratin, whatever the variety or the recipe, cheese always wins all the votes with gourmands.

Fall is the season for squash, apples, pears, mushrooms, nuts, and these delicious products go wonderfully with the other star of the season: cheese. The powerful taste of blue cheese, for example, contrasts harmoniously with the woody flavor of mushrooms. Likewise, the character of a reblochon or a goat cheese enhances the sweetness of the potatoes or butternut squash. We also really like sweet and savory combinations by pairing cheese with autumn fruits like apples, pears or grapes.
Like seasonal fruits and vegetables, cheeses also have a “seasonality”. In autumn, for example, it is the time to taste certain cheeses at perfect maturity. Blue-veined pasta, such as Roquefort or Bleu d’Auvergne, are particularly popular during this period, because they develop their full intensity of flavors. Mountain tommes, matured during the summer, also reach their peak once autumn comes.
