Savory tiramisu verrines with fresh goat cheese

Ingredients

  • 2 cheeses goat’s cheese fresh Petit Billy with Espelette pepper
  • 5 carrots
  • 100 g of cream fresh liquid
  • A few rusks or aperitif crackers

Instructions

  • Peel and cut the carrots into slices or sticks. Mix them with olive oil, cumin, salt and pepper.
  • Spread them on a baking tray and roast them in the oven until tender and lightly caramelized.
  • Let them cool then mix them.
  • In a bowl, mix the Petit Billy fresh goat’s cheese with Espelette pepper with the liquid crème fraîche until you obtain a homogeneous and creamy texture.
  • Coarsely crush the rusks or crackers to form a crispy base for the tiramisu.
  • Assemble the savory tiramisu in verrines: in each verrine, alternate successively: a layer of crumbled biscuits, a layer of PetitBilly fresh goat’s cheese sauce with Espelette pepper. Repeat these layers according to the size of your verrines, ending with a layer of carrots.
  • Cover the glasses and place them in the refrigerator for at least 2 hours so that the flavors mingle and the tiramisu sets well.
  • Just before serving, decorate with a few pieces of grated carrots for a visual and aromatic touch.
