This limited edition highlights Spanish oak barrels that have already housed whiskey, for a softer, fruitier and more balanced expression. Yamazaki, the Japanese art of assembly
Founded in 1923 by Shinjiro Torii, the Yamazaki distillery is the cradle of Japanese whiskey. For three generations, the master blenders of Maison Suntory have cultivated a constant search for harmony between nature, raw materials and craftsmanship. Their philosophy, Tsukuriwakeconsists of multiplying techniques and aromatic profiles to compose blends of great complexity.
Spanish oak occupies a historic place in this palette. It brings depth and richness to Yamazaki whiskeys, with an influence that varies depending on the use of the barrels and the maturation time.
Spanish oak, in a more subtle expression
The particularity of this edition lies in its filling barrels, called refill. Unlike first-fill barrels, whose wood marks the whiskey more directly, these barrels have already been used for a previous maturation. Their influence is thus more measured: the woody character becomes more discreet, while the fruity notes gain presence.
To produce Yamazaki Refill Spanish Oak, the blenders selected these barrels to obtain a round, soft and balanced profile. The addition of peated Spanish Oak whiskey enriches the whole with new aromatic layers, without masking the fruity expression of the oak.
This research echoes the wabi-sabia Japanese sensitivity attentive to the evolution of things over time. The barrel, reused, reveals another personality: a way of reminding us that maturation is not limited to the imprint of the wood, but also relies on the finesse of its influence.
