How to make an autumn starter?
Hot flavors on the menu
When the mercury drops and bodies wrap up warm, it’s high time to warm up with seasonal flavors, with squash, apples, pears, mushrooms, nuts and other chestnuts at the top of the list. And while cold starters are always an option, in the fall, we prefer hot delicacies made with melted cheese or roasted squash. Whether you opt for a creamy velouté, a mixed salad, or grilled cheese, with a warm starter, you’ll always have everything you need.
Soup, queen of the season
Forget about grandma’s soup or the soup from the school canteen, which we pushed away with a grimace – not having yet understood that it would later become our Proust madeleine – now we love soup. Especially in autumn! Why? For the simple reason that we can prepare it however we like (ah, the freedom of adults!) Do we prefer it velvety? So we mix everything. On the contrary, we swear by a soup full of chunks? At the right time, the squash and other vegetables will remain whole for the pleasure of our taste buds. With cream. Without cream. Decorated with a homemade parmesan tile. With croutons. Or not. Flavored with truffle salt. Garnished with simply crumbled rosemary roasted goat cheese. Ultra-peppery. Spiced with green Tabasco. We understand that autumn soup adapts to all our fantasies. And that’s good, because our grimoires are full of them.
