Celery remoulade with apple and curry

Ingredients

  • 300 g celery root
  • 1 organic Granny Smith apple (or other tart apple)
  • 4 sprigs of parsley
  • 4 tablespoon(s) mayonnaise
  • 3 tablespoon(s) of yogurt
  • 1 heaping teaspoon(s) of curry
  • 2 tablespoon(s) of cider vinegar
  • 2 tablespoon(s) pumpkin seeds

Preparation

  1. Remove leaves and finely chop the parsley.

  2. Prepare the sauce by mixing mayonnaise, yogurt, curry and vinegar. Add the parsley, salt and pepper.

  3. Peel the celery and grate it; rinse and dry the apple. Cut it into sticks.

  4. Mix all the ingredients with the sauce, and sprinkle with pumpkin seeds before serving.
