Worked by the estate’s oenologist, Damien Laurent, the Cuvées Villages of Domaine Fournier answer a key question: can we express the geographical and viticultural characteristics of a commune in a wine?

After selecting three emblematic villages of the Pouilly-Fumé and Sancerre appellations, he gives birth to vintages which represent the exact proportion of the terroirs of each commune. Unique wines of their kind but in the style of the house: very aromatic, precise and perfectly balanced. Wines to taste for great moments of pleasure.

“The 2025 vintage was marked by generous sunshine, which allowed the grapes to reach optimal maturity and perfect health. »

Damien Laurent, Oenologist

20% Morello cherries, 25% Caillottes, 55% White Earth

In the heart of Sancerre, Verdigny stands out as an emblematic commune and the historic location of Domaine Fournier Père et Fils. Its hillsides are home to a veritable geological mosaic: Griottes, Caillottes and Terres Blanches. Driven by the richness of this heritage and intergenerational know-how, Damien selected Verdigny to create a tailor-made vintage, a true mirror of the village’s identity.

40 years old and ideally exposed, the Verdigny vines provide perfect maturation for Sauvignon Blanc. For this unique vintage, Damien favors purity and finesse: vinification takes place in stainless steel vats and amphorae (for shine), followed by aging on fine lees which perfects the balance and aromatic expression of the wine.

Adorned with a golden yellow color, this cuvée expresses itself directly on the nose, where the Terres Blanches provide structure and tension. The Caillottes, for their part, reveal a more ripe and open fruit, enhanced by the superb maturity of the 2025 vintage. On the palate, the whole is both precise and dense. Carried by a beautiful material, the tasting continues with a persistent finish, where the limestone of Caillottes stretches the wine with chalky and mineral notes, while preserving a perfectly balanced freshness. Thanks to Damien’s talent, this blend emotionally delivers the true “taste” of Verdigny.

Agreements

Noble fish such as a fillet of turbot with chanterelles, shellfish, green asparagus or a tian of vegetables. Its density on the palate and its chalky finish will also enhance a pan-fried sweetbread.

Village of Saint-Adelain

5% Limestone, 40% Flint, 55% Kimmeridgian Marls

Planted in the 1980s in Saint-Andelain, the vines are subject to meticulous care. The vinification, mixing stainless steel vats and amphoras, gives the wine openness, brightness and minerality. Aging for eight months on fine lees perfects its texture and enhances the signature of the flint and Kimmeridgian marl soils characteristic of the village.

Adorned with a pale and brilliant yellow color, this cuvée opens with a nose of great purity, where the flint infuses a straight expression, made of finesse and minerality. The Kimmeridgian marls, associated with a touch of clots, enrich the bouquet with notes of ripe fruit, reflections of the solar expression of the 2025 vintage. On the palate, the wine appears precise and chiselled. The straight minerality of the flint stretches magnificently until the finish, releasing subtle touches of gunflint, the emblematic signature of the terroir. We recognize all of Damien’s rigor and precision in this high-flying vintage, a true incarnation of the village of Saint-Andelain.

Agreements

Scallops with citrus fruits, a fillet of sea bass roasted with herbs or an asparagus risotto. Its liveliness and tapered profile also contrast wonderfully with the fat of a matured Crottin de Chavignol or an old Loire goat’s cheese.

Village of Sancerre

50% Clots, 50% Flint

Eponym of the appellation, the village of Sancerre dominates the surrounding valleys from its rocky spur, testifying through its medieval streets to a centuries-old history. All around, the hillsides are anchored in a mosaic of soils shaped by the Sancerre fault, where Caillottes and Flint coexist harmoniously. It is this geological duality that guided Damien Laurent in his selection to compose a unique vintage, a faithful reflection of the distribution of these two terroirs and the identity of the commune.

In Sancerre, Pinot Noir produces red wines of great finesse. Coming from vines over 45 years old on a rare Caillottes and Silex terroir, the grapes benefit from progressive maturation. Harvested by hand and carefully sorted, the berries are vinified in conical stainless steel vats (cold maceration and fermentation for three weeks), then aged in oak barrels. Damien’s desire is clear: respect the identity of the soil to reveal the purest expression of the grape variety.

Sporting an intense purple color, this wine reveals on the nose a delicious bouquet of fresh and tangy red berries. On the palate, the attack is dense and creamy, carried by supple and perfectly blended tannins. The tasting then evolves towards delicate notes of vanilla and sweet spices, offering a whole of great harmony and remarkable relief.

Agreements

This Sancerre Rouge is ideal with roast poultry, beef bourguignon, duck breast with cherries, porcini mushroom risotto or roasted vegetables. Its supple tannins also go wonderfully with the creaminess of a Brie de Meaux with truffles or a Comté aged for 18 months, without any harshness.
