Tasty chanterelles, gourmet button mushrooms, pretty enokis, intoxicating porcini mushrooms, fleshy shiitake mushrooms, mushrooms, whether wild or cultivated, are not vegetables strictly speaking, but belong to the “fonges” (fungi) family of from which comes the term “fungal” which means “relating to mushrooms” according to the Larousse dictionary.
The sweet or woody flavors of these foods pair with fall dishes like generous omelettes to highlight freshly picked porcini mushrooms; creamy lasagna or pasta dishes; roast meats; and sauces with a strong character.
