In the kitchen with: my Halloween ghost meringues

Are you looking for an easy and wow recipe at the same time? No worries, I have what you need in stock. With Halloween ghost meringues prepared with just four ingredients, you will delight young and old gourmands alike. How to proceed ? First, you need to make French meringue – the easiest meringue! – made from egg whites, white sugar, and icing sugar. Using a mixer or food processor, whisk everything until you obtain a nice shiny meringue. We slip everything into a bag fitted with a smooth nozzle and pipe pretty ghosts. In terms of appearance, several choices are available to you, either you simply form conical meringues, or you press one or more times while poaching to add “bulges” to your spectra. Then all that remains is to cook everything for 1h30 to 2h at 100°C. For decoration, dark chocolate will be perfect. Using a toothpick, give free rein to your creativity to draw eyes and smiles that make you shiver.

Advice : if you want ultra-white and crunchy ghosts, you can push the cooking up to 3 hours, and lower the oven to 80°C.

The recipe for Halloween ghost meringues

Preparation: 10 minutes
Cooking: 1h30 to 2h

For twenty ghosts

2 egg whites
75 g of sugar
10 g of icing sugar
1 square of dark chocolate

Preheat the oven to 100°C.
Beat the egg whites until stiff. Once they are very foamy, gradually incorporate the sugars until you obtain a nice shiny meringue.
Place a smooth nozzle in a piping bag. Add the meringue, and pipe the future ghosts on a sheet of baking paper, forming ridges or not during poaching.
Bake for at least 1 hour 30 minutes. Check the texture. Extend the cooking if necessary. Let cool.
Melt the chocolate, dip the end of a toothpick into it, draw the eyes and mouth on each meringue. Savor.
