How to use edible flowers in baking?

To decorate a cake or add a vegetal note to your dessert, it's crazy what you can do with flowers! Discover our joyful and colorful recipes to enjoy to celebrate the arrival of spring.

Is it safe to use fresh flowers?

Yes, but not all. Here are some rules to follow to the letter.

1. Check that the flower is edible. The daisy, pansy, rose, nasturtium, begonia, violet, dandelion or poppy are. But avoid, among others, azalea or oleander, which are toxic to humans.

2. Opt for organic flowers sold in the fresh section in supermarkets or those from your garden (if you are lucky enough to have one). At florists, they are treated with pesticides and preservatives.

3. Also bring flower picks (available on specialized sites) to prick them without the sap coming into contact with the cake.

4. Choose very fresh flowers, and only arrange them when serving so that they wilt less quickly. Take care to remove stamens and pollen to prevent them from settling on the cake.

5. And if you're not sure, commercially available sugar paste flowers are very practical to use, especially in winter when it's complicated to find fresh flowers.
