Peaches, nectarines, what are the differences?
They seem as similar as they are different in their subtle physical distinctions, and yet, the peach, the nectarine and the brugnon come from the same tree: the Prunus persica, native to China. In this case, are there any notable distinctions? Over the years and the natural mutations of nature, the peach has simply declined into two other varieties: the brugnon and the nectarine. As a result, on the market stalls, we find these three very round fruits with colors varying from yellow to orange.
The major difference between a peach and a nectarine remains above all the texture of the skin. The latter is fluffy for the peach (which is also found flat or white, and not only round and yellow), and smooth for the nectarine. The skin of the nectarine, on the other hand, is like the nectarine, smooth, but it has a more adherent stone than that of the nectarine. As for the flesh of each of these fruits, that of the nectarine and the peach are similar, very juicy and sweet, while that of the nectarine is firmer (therefore less juicy). In short, these fruits are relatively similar, but each has its own little characteristic, and thus, its mouthfeel.
Choosing the right peach, nectarine and brugnon
Choosing the right fruit is easy. First of all, peaches, nectarines and brugnons are more likely to be delicious and ripe if they are purchased during the peak season, in summer. These fruits are fragile, so remember to handle them with care and pay attention to their appearance in three stages: appearance, touch and aroma.
To choose your peaches, nectarines and brugnons correctly, it’s all about appearance first. Their color should be bright, without green areas that would indicate a lack of ripeness. As for the quality of the fruit, avoid choosing one with spots or browning. Once in your hand, their skin should be slightly firm, without being too soft, so that you feel a slight suppleness to the touch. Finally, smell the fruit. A good peach, nectarine or brugnon gives off a light, fresh and sweet scent.
