What is bruschetta?

Bruschetta is beautiful, it’s tasty, but what is it? A tartine of Italian origin made from crusty bread seasoned with olive oil — obviously —, garlic, salt, and garnished with a fresh topping. If the recipe based on tomato salsa remains a must-have that hits the mark, other creations are imaginable. The idea is always to toast the bread before seasoning and garnishing.

Summer means seasonal produce. Roasted peppers, eggplant puree, seasoned fish tartare, everything is imaginable for a summer buffet.

Whether you’re preparing a large bruschetta or several small crispy slices of bread, the process always follows a more or less similar pattern. Toast your bread, seasoned or not with olive oil, rub it with garlic or not, then garnish and bake if necessary, especially if there’s cheese to melt.

Idea #3: Smoked mozzarella + anchovies

The good idea? This anchovy butter prepared by melting butter with anchovies and chopped sage leaves. Once firmed after chilling, it spreads easily on bread. Finally, the mozzarella, soft and melting, tempers with the strength of the anchovy and the crispiness of the bread.
