What is a good feta?

A good feta is first of all a good quality sheep’s milk which gives an animal and fresh taste to the cheese, as well as a creamy texture. In terms of flavor, the salty side must be well balanced. Then, over time, the feta must give off a nice acidity and a slight astringency. The more you keep it, the more the flavors become refined. Once opened, you can immerse it in a bowl of water for one to two days, or in brine for three or four days. Another option: cover it with olive oil, in a hermetically sealed jar – it will then keep for several months.
