What is good hummus?
For our experts, Karim and Annabelle, the answer is clear: a good hummus must first be composed of five ingredients: chickpeas, tahini, lemon, garlic and salt. It must then meet three criteria: texture, seasoning and lightness. Karim is categorical: “A good hummus is certainly not plastery. It should be creamy, smooth, without lumps, and you should smell tahini and lemon, not just chickpeas. If you can see the garlic, so much the better! » Everything is said.
