In autumn, it is impossible to ignore apples, pears, figs, plums, grapes or even walnuts, hazelnuts, or pecans for oilseeds. Vegetables are also a good idea this season, like pumpkin which goes wonderfully with a pretty sweet pie crust, for a divine “pumpkin pie” so dear to the hearts of Americans.

Sweet fall pies that are easy to make
Essential point of a pie: the pie crust, choose carefully. If our heart tells you kindly but with an ounce of firmness to prepare your shortcrust or shortcrust pastry yourself – more delicious, crunchier, in short better especially in the “pie” version – rather than turning to a commercial product, our reason knows that it is not always possible to make your own dough for various reasons… Also, in the case of a tarte tatin, it is better to go for an already ready product to 1/ save time and 2/ not embarking on an arduous undertaking, especially if you are a novice. These tips apply just as well to a quiche or a savory fall tart.
Once we have our dough, simply place the filling on top. Almond and pear cream for a crunchy bourdaloue; apples simply peeled and cut for a tart “like at Mamie’s”; apples soaked in caramel for a stunning tatin; mixture of butter, sugar and roasted pecans for a pecan pie like there, the possibilities are numerous.
Spices, always spices
This season, spices are king. Especially cinnamon which goes wonderfully with apple and pear. It is also perfect in the divine speculoos which can be used in the creation of this dessert, either mixed in the dough, or in a spread version to put in the base of a tart, and to cover with pears for example. Ginger also goes well with seasonal pies.
Chocolate, comforting flavor
When we think of autumn, seasonal fruits immediately come to mind and we tend to skip the divine chocolate. Yet combined with hazelnuts, peanut butter or many dried fruits such as hazelnuts or pecans, its warm and round flavor is perfectly in tune with the season.
