The ideal temperature for foie gras

A delicacy and a regular at festive tables, foie gras is generally more appreciated when served at a slightly cool temperature, ideally between 4 and 8 degrees. It is therefore recommended to let it rest in the fridge for 20 to 50 minutes before enjoying it. To fully release its aromas and guarantee a perfect texture, remove it from the refrigerator at least 20 minutes before serving, adjusting this time according to the room temperature. A little extra tip: place your plates in the refrigerator to keep the foie gras fresh for longer. If you serve foie gras in a terrine, don’t forget to aerate it slightly before serving it.

Our advice for serving foie gras

To make it easier to unmold your foie gras, start by immersing the jar in hot water. Next, use a non-serrated knife, which you can also dip to avoid any sticking, or use a butter cutting blade to preserve the texture. Aim for a thickness of around 1 cm for your slices of foie gras and arrange them carefully on your plates. Enrich your presentation with fruit jams, chutneys or dried fruits. These accompaniments, rich in sweet and sour, spicy or fruity flavors, will help balance the richness of the foie gras. Choose from a variety of chutneys, jam or jelly such as mango, fig, grape, onion or apple, depending on your preference.
