Vegetable meatballs, yogurt sauce

Ingredients

  • 1 large sweet potato
  • 3 carrots
  • 1 egg
  • 1 peeled sweet onion
  • 4 tablespoon(s) panko breadcrumbs
  • 1 teaspoon(s) of curry
  • 1 handful of roasted pumpkin seeds
  • frying oil

For the yogurt sauce

  • 1 Greek yogurt
  • juice of 1 lemon

  • 1 bunch of chives

Preparation

  1. Prepare the sauce: chop the chives and mix them with the yogurt and lemon juice. Salt, pepper.

  2. Peel the sweet potato and carrots, dice them and steam them. Mash them with a fork in a salad bowl. Add the beaten egg, finely chopped onion, panko breadcrumbs, curry and roasted pumpkin seeds. Shape into balls 3 cm in diameter.

  3. Heat the frying oil, dip the meatballs in it until they are golden brown. Drain them on absorbent paper and serve them with the yogurt sauce.
