Originality on the menu
When we talk about the notion of “original dish”, what exactly are we talking about? Originality being a perfectly subjective notion, which depends on each person. Originality for a chef will not be the same as for an amateur. Rest assured, even if you don’t have the technique of the older ones, nothing is stopping you from trying recipes that change. Winter vegetables cooked in another form; stews in which plants replace meat; eggs that nestle under a breaded crust, anything is possible.
If originality impresses and destabilizes you, don’t worry, we can also play originality with small touches. A spice that changes here, an unexpected herb there, a dessert transformed into a savory dish (like waffles), lentils mixed into flour for a pizza that changes, the trick is above all to have the right idea. A change can be small and make a big impact!
The extra touch
Roasted seeds and oilseeds add lots of flavor and texture to a recipe. It is used to add a seed crust to a fish fillet; offer a pesto that makes a change with simple winter pasta; or add crunch to a seasonal stuffing.
Winter vegetables in the spotlight
As usual, seasonal fruits and vegetables are in the spotlight. The advantage of these products, apart from the fact that they perfectly meet our needs in winter, is that they can be easily transformed. In puree, compote, juice: they change shape to slip easily into winter lasagna or winter shepherd’s pie. The technique for adding originality to the menu involves 1/ through unexpected tastes 2/ through a change of state. Vegetables transformed into gourmet stuffing for ravioli that change; kale and spinach leaves tucked into savory muffin batter; or lentils transformed into vegetarian sausages, the important thing is to have THE right recipe.
