Leek in soup version is like a Christmas log, a must!
Star vegetable of soups with its favorite, the potato, leek is king in its kingdom. Leek, like many other vegetables, is the ultimate health asset.
With only 27.4 kcal/100 g, leek is one of the lowest-calorie vegetables. In addition, the presence of its dietary fibers allows you to achieve this famous feeling of satiety, while having a beneficial effect on intestinal transit. Also, its diuretic action makes it very effective against water retention. In bulk, we can cite its anti-cancer and anti-cholesterol properties, its content of protective carotenes, potassium, but also vitamins E and B9. In short, leek, when consumed from the rootlets to the tips of the leaves, is a great prince in the service of our health.
Bonus point to highlight: it never hurts the wallet. Indeed, during its season — extending from September to March — it is available in quantity and therefore benefits from a more reasonable price per kilo. In addition, as usual, it is better to consume winter vegetables in accordance with the season, which correspond more to our specific needs. For example, when it’s cold, we rarely need products that provide freshness, but rather foods that strengthen our immune defenses, which are undermined by the cold and ambient humidity.
Leek soup, the good idea of the season
If leek is sufficient on its own, it works wonders when combined with other seasonal ingredients. If the leek-potato duo remains a classic, which we like to replay year after year, other vegetables deserve to be in the spotlight. Sweet potato, pumpkin, celery, but also smoked bacon, or even Morteau sausage with a good smoked taste, all are in the credits of this new winter film.
