Every fall, when Americans celebrate Thanksgiving, they don’t miss out on pumpkin pie for dessert. But one recipe in particular has been making the buzz on X (formerly Twitter) for a few days. This is the one shared by British writer and comedian Demi Adejuyigbe, and which has since broken records on the platform. He explains: “In October 2021, I ate a transcendent slice of pumpkin pie, with a dense texture. » Since then, he has tried to reproduce this “pumpkin pie with orange zest and cardamom whipped cream” every fall. This year, he took up the challenge, and posted his success on X, sharing the recipe in the process. A tweet seen more than nine million times, which has created vocations for pastry chefs, since in the responses, we can see numerous photos of its followers who have in turn attempted to cook this pumpkin pie, and confirm that the recipe is delicious.

Precision is the only thing true in cooking

In another tweet, Demi specifies that he tasted this pie at the Diane bar in Portland. So, if you don’t have the opportunity to go there, here is the recipe to reproduce urgently!

Pumpkin pie with orange zest and cardamom whipped cream:

Ingredients :

– 2 and a half cups of sugar
– 1 box of 400 g of pumpkin or pumpkin puree (it is also possible to prepare the puree in advance)
– 2 eggs
⁃ 0.5 tbsp. teaspoon baking soda
– 2 cups of flour
– 2 tbsp. teaspoon of baking powder
⁃ 0.5 tbsp. teaspoon ground cinnamon
– 1 tbsp. teaspoon of vanilla
– a pinch of salt
– 2.5 cups of milk
– 4 tbsp. tablespoon of butter (melted)
– 1 orange
– 1 tbsp. teaspoon powdered sugar
– 1 cup of heavy cream
– 2 tbsp. tablespoon of powdered sugar
– 1 tbsp. teaspoon of cardamom
– A pinch of nutmeg

Preparation of pumpkin pie with orange zest:

– Preheat the oven to 162°C
– Prepare the pie crust
(Tip from Demi Adejuyigbe: You can buy pre-made graham cracker dough or crust)
– Mix the 2.5 cups of sugar, the pumpkin or squash puree, the eggs and the baking soda in a salad bowl
– add the flour, yeast, cinnamon, vanilla and salt; mix until you obtain a homogeneous paste
– add the milk and melted butter; whisk until the mixture is smooth (if using a mixer, mix with the whisk attachment)
– Pour over the dough, filling it to the top (the mixture will be more liquid than solid, but it will rise and solidify in the oven).
– Bake at 160°C for 55 minutes
– remove from the oven and let cool
– cover with sifted powdered sugar
– zest an orange on top of the tart
(Tip from Demi Adejuibe: “microplane grater if possible, but a regular zester works great; I found the best-looking version was to peel the orange and dice the zest, but it’s a chore ! » )

Preparing the whipped cream

– Place the metal bowl and the whisk in the freezer for at least 15 minutes.
– In a bowl, mix the powdered sugar, cardamom and nutmeg using a whisk.
– Add the heavy cream; whisk until stiff
