Roasted, plain, with or without icing, the fruit skewer is a classic that is easy to make and serve. As a starter or dessert, here are nine ideas for skewers to prepare without delay.
In summer, fruit skewers are the ideal recipe to face the high temperatures, while enjoying yourself. Both light and refreshing, they allow you to end, or even begin, a meal in style.

How to make fruit skewers?
Preparing the fruit
Start by washing the fruit. Then cut them into the most suitable shape. For example, strawberries are cut in half; watermelon and melon can be cut into balls or large cubes; peaches can be cut into quarters and apricots into halves. Small fruits, such as raspberries, small strawberries and blueberries, are left whole.
It's up to you to adapt the size of the pieces according to the size of the fruit, but don't forget that to fit on the peaks, they must be quite thick.
Be careful, if you prepare apples or bananas, remember to sprinkle them with lemon juice. These fruits tend to oxidize and blacken quickly.
Mounting
Thread each piece of fruit onto the picks, taking care to alternate varieties, colors and textures. For example, you can create sublime shades of red or a rainbow. Also, a few cubes of cheese, marshmallows, or pieces of cake will be welcome to add a good dose of deliciousness.
Cooking (optional)
In summer, you can't resist the desire for grilled fruits on the barbecue and on the plancha. To do this, simply place the skewers on the grill and remove them as soon as the fruit has browned. No need to leave them any longer, the goal is not to cook them. This would soften the fruit and they would no longer hold on to the thorns. Simply sear them over the flame, or on an electric hotplate.
Note also that most fruits, except the smallest, are suitable for exercise.
The service
Want to raise the level of fruit skewers? Why not roll them in coconut or crushed pistachios before serving? This will add extra flavor and texture. Otherwise, a sauce, such as a vinaigrette as an aperitif or melted chocolate for dessert, will be the final touch that will hit the mark.
Our advice: for a chic presentation, offer the sauces in individual containers, such as verrines. Otherwise, opt for a fruit skewer bar, providing your guests with several types of toppings (seeds, sugar vermicelli, fruit coulis, etc.).
How many skewers to plan per person?
It all depends on the size of the picks used. We generally recommend providing 2 long or 4 small skewers per person. You can make up to 6 mini skewers, if this is the only appetizer or dessert.
