Autumn is here, and so are the mushrooms. Here are 20 recipes that will properly celebrate these sporophores. Because yes, the mushroom is not a vegetable.
It has everything to be a vegetable but is not one. As rich in vitamins, minerals and trace elements as they are, the mushroom has everything good. It is the food that we should eat every day, especially during this season. Flavor-wise, we recognize it by its woody notes which enhance omelettes, broths or risotto. Color-wise, it almost blends in with the autumn leaves. The mushroom is the ingredient that we pick and then cook, right up to dessert.
How to flavor mushrooms
Before giving the mushrooms flavor, we preserve our own. The mushroom itself is very tasty. To preserve this asset, we definitely do not rinse it. Its absorbent properties will allow water to invade it, to the point of altering its taste. To clean your mushrooms, you decide to cut off their “stem”, before rubbing them with damp paper, then drying them.
We then move on to cooking the mushroom, whether in water, in the pan or in the oven. What will further enhance its taste and tender texture are the aromatics. Oil, garlic and herbs, such as chives or parsley, will be the best solution to make mushrooms a nugget on the palate.
Mushroom in cooking
In the kitchen, it is customary to integrate the mushroom into a risotto, bourguignon or meatloaf.
It also goes very well with eggs, like an egg soufflé with mushrooms and coconut milk or an egg casserole with foie gras.
For a tart, you can try a tart with grilled mushrooms and onions or mozzarella mushrooms.
It can also be cooked alone, in velouté, pan-fried or carpaccio.
