How to make ice cream without an ice cream maker?
Eskimos, granitas, Indian kulfi, or even American-style frosted sandwiches made with homemade or store-bought ice cream… Here are 4 ways to enjoy a frosted dessert, without an ice cream maker. Enough to lower the temperature in your kitchen in the blink of an eye.
In Eskimo or popsicle
These famous little ice lollies with crazy flavors, known and loved by all.
The base: 1/5 syrup to 4/5 water or milk, with a touch of alcohol for a perfect texture. Yogurt, fruit and fresh herbs are also welcome!
The recipe: mix 500g of watermelon with a syrup (50g of sugar + 5cl of hot water) + 1 tbsp. of Martini + the juice of 1/2 lemon + 1 pinch of salt. Leave to set for 4 hours in molds.
The trick that makes the difference: always add lemon juice and salt to enhance the taste of ice cream.
In a frosted sandwich
A true institution in the United States, the ice cream sandwich is nothing other than an ice cream sandwich, made up of a puck of ice cream slipped between two cookies to crunch. If you don’t have ice cream in your freezer, whipped cream mixed with whipped egg whites, put to harden in the freezer, this also works perfectly!
The recipe: mix 75g of melted butter + 10cl of agave syrup + 140g of flour + 1/2 teaspoon of bicarbonate + 100g of grated dark chocolate. Form balls of dough and bake for 11 minutes at 180 °C (th. 6). Leave to cool, then place in the freezer for 1 hour. Assemble the cookies with a puck of ice cream in the middle before tasting.
The trick that makes the difference: let the ice cream soften a little, then make the discs using a cookie cutter. Place them in the freezer on a sheet of baking paper.
In granite
An essential dessert for summer vacations, granita comes in a variety of flavors.
The recipe: pour 50cl of sweet liquid (infusion, tea, coffee, herbal tea, fruit juice) into a metal dish, place in the freezer and scrape every hour with a fork as soon as the edges start to turn glittery.
The trick that makes the difference: freeze the bottom of a coffee maker in an ice cube tray then mix in a blender, “crushed ice” function. Cover with whipped cream.
In kulfi
A taste journey to the heart of Asia, with this Indian treat with condensed milk.
The recipe: infuse 2 cardamom pods and 4 saffron threads in 10 cl of hot milk. Add 1 can of sweetened condensed milk + 10 cl of thick cream + 100 g of crushed pistachios + 2 tbsp. of rose water. Freeze for 6 hours and take out 10 minutes before serving.
The trick that makes the difference: leave the kulfi to set for 1 hour in muffin cases or cannelé molds, and stick teaspoons in them.
