Meteorology vs Astronomy
If the date of calendar (or astronomical) spring, March 20, 2023, corresponds to the spring equinox, the moment when the sun is precisely vertical to the equator, in meteorology, spring extends from March 1 to May 31st. And at the basket level too, the change is starting to be felt! If the squashes are at the end of their run but still available, leeks, cauliflowers, carrots are still there. Early vegetables, digestible with their tender fibers, easy to prepare, sources of vitamins and antioxidants, bring a breath of freshness to our plate. The opportunity to include spring onions or artichokes on the menu, among others.
On the fruit side, oranges once again bring us a lot of vitamin C this month, like lemon or kiwi. Ideal for resisting small seasonal ailments.
Ideal recipes
After the many celebrations of the past month – between Candlemas, Valentine's Day, and Mardi Gras – this month, we note Grandmother's Day on March 5, the arrival of spring on the 20th, then Easter which is looming this year as of April 9.
It is also in March that the desire for “green” begins to be felt. As the temperatures become milder, we want to lighten our recipes. While soups are always the cold day option; hot and cold salads; ceviches and carpaccio of all kinds; but also raw-cooked toast are perfect options this month. Halfway between winter and spring, our plate follows the weather and desires as changing as the weather. Sometimes we will want melted cheese in gloomy weather, sometimes the freshness of spring will put us in a perky mood at the start of the season where renewal – and early vegetables – are in order. Like the buds and the awakening of nature, the little shoots invade the plate, all dressed in green.
If cheese is a must all year round, when spring comes, it is in the fresh version that it appeals. Fresh goat's cheese, ricotta, faisselle, bush, labneh, these are all good. We slide them onto bread in easy sandwiches; generous quiches; gourmet cakes, or original pastas.
