A complete and vegetarian plate for spring
Seasonal fruits and vegetables
With winter over, we can finally find our favorite spring products. What a joy to put strawberries, fennel, asparagus and rhubarb on the menu again! Not to mention all the so-called “new” vegetables like carrots, onions and potatoes. Harvested before reaching maturity, they are the first to come out of the ground and end up on the shelves. They are also very popular with discerning gourmets. In the kitchen, we love their crunch and their flavor, sweeter than the rest of the year.
We also don't forget the spring fruits which can also be enjoyed in savory dishes. Combined with fresh cheese and avocado, strawberries might just surprise you! This season is also one of the last opportunities to enjoy citrus fruits, which are available in salads, vinaigrettes, or sorbets.
Proteins without meat or fish
Contrary to popular belief, you can cook vegetarian and protein recipes. Simply include alternative protein sources in your diet. In this category, we find tofu, legumes, oilseeds, eggs and cheese.
In spring, bet, for example, on a wok with carrots and tofu; a salad of lentils, radishes and goat cheese; or an avocado toast with a soft-boiled egg.
Starchy
Because a meal will never be complete without a source of carbohydrates, make sure to always have one on the plate. Quinoa, pasta, rice, semolina, noodles… You are spoiled for choice.
What vegetarian recipes for spring?
Spring tarts, savory cakes, vegetarian spring rolls, your favorite recipes are available all year round. You can also get a head start on the summer period by organizing a barbecue without meat, on days when the sun is shining and temperatures are mild. With seasonal vegetables, vegetable pancakes, and halloumi to roast, there is no doubt that vegetarian grills have nothing to envy of merguez and other skewers. Even the burgers and bagels come in a veggie version with radish, arugula and fresh goat cheese. A pure delight.
Finally, one of the highlights of spring is, of course, Easter. So to satisfy everyone, we don't hesitate to concoct a vegetarian Easter menu, without the traditional lamb, but just as delicious.
