In winter too, seasonal pies are a good idea. Citrus fruits, apples, pears, persimmons, or even chocolate, zoom in on these crunchy delights.
How to make a sweet winter pie?
What are the star fruits of winter?
In winter we give pride of place to citrus fruits. Good news, we are told in the headset that there is a delicacy that highlights a citrus one: lemon. Whether in a simple or meringue version, lemon tart is a delight, especially if you prepare it with pretty plump and fragrant fruits, completely in season. Obviously, this tart made from curd and crunchy pastry can be made with other citrus fruits such as grapefruit, divine blood orange, clementine or mandarin. We can also play on a mix and match of flavors between the strength of lemon and the sweetness of clementine for example.
But citrus fruits aren’t the only fruits that can be made into pie. Don’t think that the apples and pears will play as substitutes this season, they are still on the field until the end of the match and intend to score many goals this winter! Fine tart, bourdaloue, tatin, rustic, the variations are numerous.
The cozy flavors of winter
Obviously, fruit is a wonderful option when you want to prepare a sweet winter pie, but other products are just as suited to the season. This is the case of the chocolate king, the caramel prince, the prestigious coconut, the fantastic honey, the charming oilseeds, the perfect praline, or the grandiose pink pralines. All these “round” flavors, comforting, creamy, melting, honeyed, in a word addictive, are perfect when the days are cold, and you need a dessert that lasts for the body.
And if you want to serve your tart with whipped cream to accentuate the regressive/gourmet side, far be it from us to throw the first bit of butter at you! A sweet winter tart must be comforting, that is its primary mission, so you are free to include fruit, crème fraîche, chocolate, frangipane or almond cream, caramel, praline homemade, or to overcome the story of an alluring meringue.
Sweet winter pies that are easy to make
Dough
Whether it is flaky, broken, shortbread, or made from mixed biscuits + butter, it doesn’t matter as long as the deliciousness is there. Of course, we cannot advise you enough to prepare your dough yourself so that you can add lemon zest, spices, or even alcohol to flavor it, but you can also opt for store-bought products. In this case, carefully check the composition of the product by deciphering the label, to choose wisely without being influenced by the “marketing” of certain brands.
The garnish
In the case of a chocolate tart, the simplest is to make a ganache with chocolate of your choice + hot liquid cream. Once poured onto the pre-cooked tart base, you can either refrigerate your tart until the chocolate sets, or put it back in the oven. It all depends on the recipe, and the variations of chocolate tarts are as numerous as there are chefs in the world. That is to say !
For a lemon tart, you can obviously choose a store-bought lemon curd, but that wouldn’t really be a homemade lemon tart. And we know that you know that we know! So it’s better to prepare it yourself, especially since it’s super easy. Lemons, eggs, sugar and butter, and onward to Guingamp. We pour it onto a tart base, and we put it in the oven. Even easier to make than to write.
For fruit tarts, we’re not going to make them for you upside down, and we trust your experience. A tart base, fruit in pieces, compote and/or strips, a binding device which can be an almond cream in the case of a bourdaloue, or an egg/cream-based device, this enough to make any fruity tart.
