Watermelon is considered the star fruit of summer, many of us love it but not only in the sweet version. A slice of watermelon in a salad makes a difference. The proof with these 8 watermelon summer salad recipes to try.
The benefits of watermelon
Putting watermelon in our salads is an opportunity to eat more of it. The lowest calorie fruit, it is much more than just a fruit: it is full of water. With a content exceeding 90%, watermelon is an excellent ally for hydration, while being rich in potassium, magnesium and vitamins (C, A, B1, B5, B6).
With or without seeds?
There are clearly three camps on the consumer side: those who remove the seeds, partially remove them and those who bite into them with their full teeth. Know that their benefits are numerous. They facilitate digestion with their richness in dietary fiber and regulate transit problems, but these natural diuretics also help fight water retention, stimulate the heart, reduce the symptoms of depression and slow the development of diabetes. The seeds also help to have more radiant skin. Little tip: collect your watermelon seeds, toast them and add them to a salad to add a little crunch.
Combos to try
In addition to its benefits, we appreciate watermelon above all for its deliciously sweet taste and juicy flesh. As for the combination, you absolutely must try the watermelon feta combo. The firm flesh and intense flavor of feta balance the juicy flesh and sweet taste of watermelon. As for the watermelon and aromatic herbs combo like basil or mint, it goes perfectly with a Greek salad composed of tomato, cucumber, green pepper, red onion, feta, olives, olive oil, and oregano. You will obtain a slightly sweet and fresh Greek salad thanks to this combo.

You wouldn’t throw away the watermelon skin if you were told what you could make with it: pickles. Collect the bark free of flesh and cut it into small cubes. Bring 30g of cider vinegar to the boil with 4 tbsp. powdered sugar and the spices of your choice, then add the watermelon rind cubes for 3 minutes. Then refrigerate everything in a jar for 24 hours and you will get watermelon pickles that you can chew like pickles. These will have their place perfectly in your salads, especially if there is feta. They will also be welcome in an aperitif or summer verrines while avoiding waste. Once the skin of the watermelon is used, it’s time for the most important thing: the red and juicy flesh of the latter. Easy to cut, there is a very nice way to present it. Cut your watermelon into cubes, as well as an avocado and melon and assemble them into a Rubik’s cube. This is a very original and fun way that will appeal to young and old alike.
