A syrup for fruit salad
We prepare a fragrant syrup in the style of Sébastien Gaudard by infusing gingerbread spices in hot water, sweetened or not. It is served with an orange or grapefruit salad. You can also prepare a very dense syrup, which you pour into steaming tea. A treat.
A fragrant breadcrumb
No time to prepare gingerbread to turn into fragrant breadcrumbs? No problem, just mix rusks with spices, spread over pan-fried foie gras, pumpkin or chestnut velouté.
A crème brûlée topping with foie gras
To make mini foie gras crème brûlées even more festive, sprinkle them with spicy brown sugar before caramelizing them. Simple and effective.
A chai tea latte
For a seasonal chai tea, toast the spices for a few moments, then add milk, water and black tea, before letting it heat and infuse for 5 minutes. To sweeten as desired.

A spicy crust for duck breast
For a change from capon or turkey, think of duck breast in a crust, just as festive. For the meat to look its best, remove the skin from the duck breasts, fry them for 3 minutes on each side, and cover them with a crust made of spiced breadcrumbs and softened butter before putting them in the oven.
