Raclette cheese, emblematic of Swiss and Savoyard cuisine, is widely appreciated for its inimitable taste but above all its melting texture when heated. If it gives its name to the traditional raclette, where it is melted and scraped over potatoes often accompanied by cold meats, raclette cheese lends itself to many other recipes, perfect for an autumn dinner: vegetable gratins autumn, gourmet sandwiches, pizzas, pies and even soups. Cooking raclette cheese
Whether smoked, plain or flavored, raclette cheese is the star of the cold seasons. In autumn, it goes wonderfully with seasonal vegetables such as squash, mushrooms or even pears. The charm of this cheese is its ability to melt perfectly without destructuring, which makes it an ideal base for gratinated or melted dishes. Consider adding nutmeg, black pepper, chili or even a hint of cinnamon which go as well with raclette as with autumn vegetables.
