Fall is the ideal season to indulge in comforting dishes, and potatoes are undoubtedly one of the key ingredients of this period. In a creamy puree, tender gratin, crispy fries or comforting soup, it suits all tastes. Their versatility makes them a perfect choice for cozy dinners with family or friends that will warm up your fall evenings.
The benefits of potatoes
Although we often talk about the potato as a whole, there are more than 4,000 different varieties, each with its own characteristics. The choice of potato variety is crucial in cooking, because the texture, starch content, and even flavor vary from one potato to another.
If the texture and flavor vary, its benefits do not change. Low in calories, rich in vitamins and fiber, it contributes to satiety, promotes digestion and is an excellent source of energy. Consumed in the evening, like other starchy foods, it even promotes better sleep.
Cooking potatoes in autumn
In autumn, the potato lends itself to all variations. It is cooked with wild mushrooms, such as porcini mushrooms or chanterelles, which add a woody touch. We like to accompany it with squash, parsnips or carrots to create colorful gratins. As for herbs and spices, thyme, rosemary and sage delicately enhance its taste, while candied garlic and caramelized onion add sweetness. Melting cheeses like Reblochon, Bleu or Camembert enhance it in gratin dishes. Finally, a hint of Espelette pepper, nutmeg or a touch of black truffle enhance the potatoes for fall recipes that are both simple and delicious.
