Fish soup with Thai flavors

Ingredients

For 6 people:

Preparation

Put the broth, the pepper, the lemongrass, the ginger, the fish sauce and the combava leaves in a large saucepan and bring to the boil over medium-high heat. The Combava is a citrus; Its leaves can be replaced by those of other citrus fruits, or bay leaf.
Reduce the heat to low intensity and simmer gently for 3-4 minutes to infuse the flavors. Add the tomato, salmon (be sure to remove all fine edges) and noodles, and simmer gently for 4 to 5 minutes maximum, until the salmon becomes opaque. (The cooking time depends on the thickness of the noodles and they can very quickly end up, so watch out).
Pour the soup into bowls, sprinkle with coriander and add a little lime juice. Advice this soup adapts to all tastes, because you can vary the flavors by adding more chili or Thai chili paste, fresh mint or lime slices instead of combava leaves.
