We discover new sensations
Unusual Smoked by Nicolas Cloiseau
After curry, oyster and caviar, Insolite reveals a new sensation: smoky, born from a blend of three chocolates worked into ganache: a 66% Pur Cru Équateur with notes evoking leather, a 65% cocoa with almost animal tones, and a 40% milk chocolate which calms without smoothing. The chef adds a caramel infused with toasted vanilla, enhanced with a touch of smoked salt and paprika. Just what you need to turn up the heat.
