Potato samosas

Ingredients

  • 1 large peeled potato
  • 4 round brick sheets
  • sunflower oil

For the tomato catini

  • 1/2 tomato cut into small pieces
  • The leaves of 1 bit of chopped coriander

  • The leaves of 1 bit of chopped mint

Preparation

  1. Cut the potato in half and cook it in a pressure cooker for 2 min. Crush it with a fork, salt and pepper.

  2. Cut a brick sheet in two. Fold the round edge to form a single strip of rectangular dough. Place 1 tsp. potato crushed at one end, then fold to obtain a triangle by sticking the last fold with a little water. Repeat the operation to make the other 3 samosas.

  3. Fry the Samoussas in sunflower oil until they are golden (5 to 7 min approx.).

  4. Prepare the catini: Mash the tomato, coriander and mint in a mortar.

  5. Season and serve in a ramekin, with the Samoussas.
