Grilled pepper mezze with ginger and garlic


  • 12 multicolored peppers
  • 3 cloves of garlic
  • 30 g ginger
  • 8 tablespoon(s) of olive oil
  • 8 sprigs of basil
  • hummus and crackers (for accompaniment)


  1. Preheat the oven to 200°C (th. 6-7).

  2. Place the whole peppers on a baking tray and bake them for 45 minutes. Let them cool, then remove the skin, seeds and stalk.

  3. While the peppers are cooling, peel and finely chop the garlic and ginger. Mix them with the olive oil and chopped basil. Add the peppers cut into strips. Season with salt.

  4. Serve this mezze warm or cold, with hummus and crackers.
