Sitting down at the table around a vegan and gourmet festive dinner, without any products of animal origin: it’s possible! All it takes is a little imagination and the right ingredients for a chic and gourmet meal.
To celebrate Christmas, we want a festive menu, made up of colorful, easy and tasty recipes. We also want contrasting textures, and 100% vegan dishes, focused on eating well. Don’t panic in the kitchen: there are tasty alternatives, from aperitifs to desserts, to adopt a vegetarian and even vegan diet while really enjoying yourself.
We start with homemade blinis to garnish with “cream cheese” made from soy cream.
As a starter, we opt for delicious chic vegetable soups, which we enhance with a few nuts. To replace the usual crème fraîche, we choose a rice cream with a creamy texture. A chic vegan recipe par excellence, the smoked tofu ravioli, served in a saffron broth, will make our guests melt.
What ingredients for a gourmet vegan Christmas meal?
Opting for vegan recipes for entertaining does not necessarily mean that you have to give up traditional Christmas dishes. We thus prepare a delicious vegan Christmas terrine, based on meatless foie gras, prepared with tofu and mushrooms. As for the mini-chaplains, they are concocted with seitan or tempeh, vegetable proteins which are delicious.
The Christmas roast is also vegan and takes the form of delicious slices of tempeh, served in a cranberry gravy sauce. Any ideas to support our preparation? A pumpkin parmentier, curried lentils, or stuffed squash.
As with classic recipes, we remember to use the right oils (rapeseed, or olive oil), and we give flavor to our dishes by adding the perfect dose of salt, spices and aromatic herbs. Indeed, seasoning plays a big part in the success of a dish!
We continue our momentum until dessert, without forgetting to go through the vegan cheese box, or faux-mage, a plant-based alternative to classic matured pastas, which can be prepared from vegetable milk or oilseeds, but which we can also be found in organic stores.
As for dessert, we test different flours – rye, brown rice, buckwheat – for our sweet creations, which we don’t hesitate to combine with silky tofu, vegetable milk, or even soy yogurt. Whether it’s a chocolate Christmas log, gingerbread, or even chestnut mousse: everything can be made without dairy products. We even love the vegan carrot cake, ideal for a Christmas snack. And since everything is possible at Christmas, we even risk some comforting and gourmet preparations for the vegan brunch the next day, or a vegan king cake for Epiphany.
