Vegan caviar with nori leaves


  • 10 cl of filtered water
  • 2 tablespoon(s) soy sauce
  • 10 cl of organic sauerkraut juice
  • 4 sheets of nori
  • 1 dried tomato
  • 1 level teaspoon(s) of powdered ginger
  • 1 teaspoon(s) of Espelette pepper
  • 6 tablespoon(s) chia seeds
  • 3 tablespoon(s) of sesame oil


  1. Mix the water, soy sauce and sauerkraut juice in a bowl.

  2. Crumble the nori seaweed sheets into the mixture and mix them. Leave to macerate for 1 minute.

  3. Pour the seaweed mixture into a blender with an S-blade, and add the dried tomato and spices. Blend until you obtain a grainy or smooth texture depending on your preference.

  4. Add the chia seeds to the resulting mixture, then leave to rest for 1 hour in the refrigerator.

  5. Add the sesame oil before serving.
