Even if you don’t eat meat, the menu must include proteins. So, eggs and legumes will be your best friends for a balanced meal. Your meat-free back-to-school menu

As a starter, we chose a spread that is inseparable from Mexico: guacamole. Gourmet, this recipe has festive accents. Exactly what we need to dispel the apprehension of returning to mealtime. The secret to success? Choose very ripe avocados (they should be supple, but not soft to the touch), and don’t skimp on the spices. Also, don’t forget to sprinkle the guacamole with lime. In addition to providing a little acidity, this prevents the avocado from oxidizing and blackening.

The meal continues with enchiladas topped with red beans and cheddar. Another popular Mexican specialty that will delight adults and children alike. The advantage of red beans is that they provide a good amount of protein to the dish, essential for a vegetarian meal.
You will note that this recipe contains Mexican pancakes made with wheat flour. If you have time, it is very easy to make these homemade tortillas. The recipe is quite simple, and doesn’t require any unobtainable ingredients, just flour, water, oil and a pinch of salt. On the other hand, if you are in a hurry, there is no problem in buying ready-made wheat pancakes. The back-to-school week is sporty enough, no need to add extra work in the kitchen.

We finish this menu with one of our favorite desserts, chocolate mousse. And not just any one, that of Jean-François Piège, himself! The particularity of the recipe is that the chef prepares a sabayon with water, sugar and egg yolks, before adding cocoa. Next to it, he beats the egg whites and mixes them with melted chocolate and whipped cream, then adds the sabayon. Thanks to this technique, the mousse does not need to take several hours in the refrigerator. About ten minutes is enough to obtain an aerial device. You can therefore make this recipe the same evening, and let it rest while you enjoy the starter and main course. Practical, isn’t it?
