Is it possible to cook cheaply, without compromising the quality of your dish? The answer is yes ! Both in terms of associations and nutrients, there are a good number of foods that allow you to eat healthily without breaking the bank. Starters, main courses and desserts… The ideal is to plan your meals for the week in advance, in order to anticipate the shopping trip, and avoid waste. Many preparations are also very easy to keep refrigerated, and can be taken out several times over the course of the days.

Unsurprisingly, seasonal foods top the rankings for the simple reason that they do not need to be exported. Thus, they are cheaper and full of all kinds of nutrients, necessary for the body depending on the time of year. In autumn, root vegetables and cucurbits are in the spotlight. Leeks, carrots, and squash of all kinds are just waiting to be slipped onto our plates, as their warm colors embellish each preparation. They are available in autumn salads, gratins or savory tarts, enough to vary the pleasures. As for fruit, apples, pears or figs enhance our desserts in the blink of an eye.

To reduce the food budget, we stock up on canned products and legumes. Lentils, chickpeas, beans and even peas keep for a long time and are affordable. Starchy foods are also inexpensive, and contrary to what one might believe, it’s not just pasta that is on the menu. Yes, rice, couscous, potatoes or quinoa also do the trick and help you stock up on energy.

Finally, in the protein section, the egg is probably the most profitable food as it offers so many possibilities in cooking. Another option: canned fish, chicken or pork.

What an inexpensive autumn menu?

As a starter, we opt for crispy carrot pancakes, which can be served with a sauce of your choice. An easy recipe, which combines both seasonal vegetables and legumes since the breadcrumbs contain chickpea flour. We garnish everything with herbs and spices such as parsley, pepper or chives, before cooking them over high heat, for about 4 minutes on each side, in a pan containing vegetable oil.

As a main course, let yourself be tempted by a seffa with North African flavors based on couscous, mackerel fillets, endive, walnuts and fennel. Sprinkle the semolina with oil and a little hot broth, before letting it swell under a damp cloth. As for the fish, we cook it for around 10 minutes, in a steamer, or even better, a couscous maker. This is an original and complete dish that doesn’t hurt your wallet!

Finally, for dessert, we finish in style with baked apples, garnished with walnuts and cranberries. Flavor everything with vanilla sugar and cinnamon, before putting it in the oven for about 40 minutes under baking paper (which will be removed 10 minutes before the end).
